Hello friends! I'm a proud owner of a used e-tron from 2020 since October 2023, imported from Germany to Barcelona. I'm considering changing the rims for 19's, any thoughts?

The Taller the rim the Shorter the tire sidewall. I do not have experience with 19's. But my A3 came with 18's, and I can say putting on Snow tires mounted on 17's made a very noticeable difference in ride comfort. You will see similar comment from many others. I think the Tires make a more significant difference than Wheel Size.
And when you add 19's that were not OE for a car you may need adjustment to Alignments as the car was not designed for them.
Google wheel sizes on other versions of the 2018 - 2020 A3 in Europe. Maybe the there was an A3 RS version with 19's? Good luck in your search.
 
Our A3 e-tron has 18” rims from an A4 for summer tires, using the stock 17” rims for winter tires only. They are 225 45 18 which is a non-standard size for the A3 as 18” rims for the car would typically be 245x40: a wider tread but shorter sidewall. I went with 225 width because I did not want more rolling resistance affecting fuel efficiency. To me, the benefit of the 225 45 tires combined with 18” rims is filling the wheel wells (aesthetics) plus they make the speedometer quite accurate. The stock 17 rim and 225 45 tire combination makes the speedometer indicate a higher speed than actual (according to gps/digital speedo) which is similar in overall circumference with the other OEM size, 245 40 18.
